Shonora Natural comes from coffee farmer, Morkata, of Guji, Ethiopia near Gerba town, Sakicha area. This coffee goes through various processes to ensure a consistent and quality cup of coffee. All fruit is selectively hand harvested before being delivered to the washing station. This ensures that all fruit being picked is ripe and ready.
Once the cherries are picked and washed, they are then laid out in thin layers & dried on raised beds. The fruit dries on these beds for approximately 15-21 days, depending on the weather. During this time, the coffee cherries are constantly being turned throughout the day to ensure even drying. Throughout the process, any unripe cherries are being sorted out- helping to further the consistency!
