Ella Todos Santos comes from Jorge Mendez, a Guatemalan coffee farmer and apiarist in the Huehuetenango region. Huehuetenago is a remote mountainous region of Guatemala known for its coffee production. The coffee farm doubles as a honeybee farm with a few dozen wooden boxes where various hives live naturally. Combining honeybees and coffee plants has been shown to increase crop yield and stimulate plants to become hardier against disease and pests. The Ella Todos Santos coffee is a complex coffee with a medium acidity, body, and sweetness. We chose flavor notes of jasmine, milk chocolate, and rhubarb to describe this cup of coffee.
